Prawn & Chorizo Skewers
This is entirely different from the other options. Containing no vegetables this one is all in the marinade. A beautiful paprika, garlic and a dash of lemon are the keys to this option. This is super easy, no drama!
For this you'll need the following ingredients.
20 King Prawns / Large Prawns whichever is easily available.
2 Spanish Chorizo, chunky and short are often my personal choice for this meal or use 1 regular sized - sliced into discs.
25g Heavy Smoked Paprika.
1 Large Bayleaf chopped finely.
1 Tablespoon of olive oil.
1 Tablespoon of Himalayan 4 Peppercorn ground.
2 Fresh Garlic Cloves - Crushed.
1 lemon sliced into wedges.
Directions - Quick and easy.
Begin by mixing together the Paprika, bay, oil, 4 peppercorn and fresh garlic. Add Prawns and marinate for 20 minutes.
Prepare your barbecue and allow the fire to settle into embers. Our rule is to avoid using any unnatural fire accelerant as this can flavour, and be adding potentially harmful chemicals, to your cooking.
Begin to build your skewers, find a balanced pattern of prawns and chorizo. If you are feeling artistic, curl the tail of the prawn around the slice of chorizo. This recipe can be scaled as required quite easily, and chorizo or pawns left over always make a nice table snack.
Brush the prepared skewers with olive oil and cook until slight charring all over. Shouldn't take more than 1-2 mins on each side. Remove from the bbq and service with the Fresh Lemon and a sweet chilli dip.
