The Perfect Sunday - Step 1 Breakfast

I don't believe there is anything better than a simple poached egg to kick off the perfect Sunday morning.

Beginning Sunday full of flavour.

As is always said 'Breakfast is the most important meal of the day' couldn't be anymore accurate. I don't think I could get through a morning without taking time to have breakfast, especially on a relaxing Sunday!

Good Eggs is key, we've all had an egg that when cracked open reveals a weak pale yolk and the flavour to go with it. Good eggs don't need to be expensive eggs, searching out a local organic free range farm will often sell off eggs either too large or incorrect colours, for supermarkets, direct to public for a great price. My local farmer even has an issue with his hens being so healthy they all lay double yolkers for the first season, supermarkets don't want this, we really do! And the colour of the yolk is vibrant and tasteful.

The next important part is the bread, making the extra effort to leave the house early to get to the bakery is key. Whether it is for your loved one or even a treat for yourself getting an early walk can really lift the spirits and top off the #PerfectSunday morning experience. The tricky part is the bread... #sourdough, english muffins or a wholemeal will be a tough choice. With #poached eggs #breakfast sourdough is best option for the yolk to get in there.

An often overlooked detail is the beauty in the small things. Such as a lovely plate, the presentation and the display of love for the item prepared. Something to display the personality and the style of the creator of this meal. Personal choice of mine is something rustic wth a bright vivid colour. This always is a reliable choice as it compliments the food, especially for the obligatory photographs.

Getting your greens. Always helps when beginning the day to get the greens in early. Keeping your Spinach fresh is key for its health benefits, and it works best for adding texture and flavour to your poached eggs.

Always make sure the spinach is washed and organic, I've always found the organic alternative to be much more luscious and vivid. Green Beans accompany this nicely, steamed with a light salt is a very light side to get even more greens, then you're ready for the day ahead!

Now to top it off with a very much necessary additional flavour. Garlic, it's hard to go wrong with garlic, but how? Roasting garlic or preparing garlic for topping the breakfast can be a hassle, lots of extra washing up. This is where Garlic Salt is perfection. You've done the breakfast, brewed a fresh coffee, Spotify is playing a Sunday playlist, sat down and you just need that final touch to make this breakfast pop. 4 Organic Free Range Eggs

1/4 Loaf of Organic Sourdough

20g Organic Spinach

5g Organic Garlic Himalayan Salt

2g Organic Butter

100g Organic Green Beans


Step 1: Use a medium sized pan on a medium heat with salted water.

Step 2: Prepare a steamer with hot water on a medium heat.

Step 3: Prepare, wash and steam the green beans for 10 mins (when steamer is at boil)

Step 4: Whilst the beans are steamed wash spinach and place in a bowl to dry

Step 5: Add a tea spoon of Olive Oil to the boiling water, this reduces the egg splitting in the water.

Step 6: Lower the heat on the boiling water, then add your eggs. I only cook 2 eggs at a time to avoid crowding the pan and causing eggs to break up. Only poach for up to 4 mins 30 seconds, I've found this to be perfect balancing point.

Step 7: Begin to toast your sourdough on a medium heat.

Step 8: Butter and plate up the toast.

Step 9: Layer the spinach on the toast to create a base.

Step 10: Place poached eggs on top.

Step 11: Remove and plate up the green beans.

Step 12: Sprinkle with Organic Garlic Himalayan Salt.

Serve and Enjoy.
